Recipe Remake: Oktoberfest Stew (or German Stew when not in the Oktoberfest season). And just because it’s hot outside doesn’t mean a good, hearty stew isn’t just the thing that’s needed in the evening when everything is cooling down for the night. Or for lunch at the office because there is no consistency in temperature and your office happens to be an ice box...I have a poncho permanently perched on top of my chair and a heater under my desk, which is typically on all day, every day, throughout the year 😑 I also had a little extra cabbage from this week’s “Cooking with Alex” and this recipe is the first thing I think of! The substitution of béchamel for ricotta was what sold those of my dearest companions (who don’t like ricotta) to give this a go, and boy did they love it.
